30 Minute Meals
If you love great food but don't have a lot of time to spend in the kitchen, this is the class for you. Frederick will be teaching you some delicious recipes that will impress your family and friends. Pea and haloumi fritters, mustard dill pikelets with smoked trout and avocado salad, beef teriyaki with Asian style noodles are just some of the recipes you will find in this class.

A Lavish Picnic, the Perfect Hamper
The picnic is a wonderful way and great tradition for entertaining and enjoying the great outdoors. Whether it’s a special occasion, concert, beach trip or even your own back garden, bring a blanket and hamper and you have the perfect environment to enjoy a sumptuous meal. In this class Fred will guide you through the best foods, quantities and preparation of your picnic. Some tantalising taste we will be preparing will be smoked chicken pate with homemade crisp breads, a selection of dips with seasonal and fresh produce, Poached and flaked melody of seafood with nut brown butter, caper and flaked almond dressing.

A Moroccan Feast for Christmas
Many of you have enjoyed Riki's Tajine and Moroccan Feast classes. In this special extended 4 hour class, Riki will be teaching you some wonderful Moroccan celebration food that you can make for your special Christmas lunch, just for something a little different. Riki will be showing you how to cook 6 dishes and 2 desserts in this class. Moroccan food is one of the great cuisines of the world with an emphasis on the subtle use of spices with meats, fish and vegetables with traditional accompaniments. Of course the perfect finish will be lovely, sweet and spicy Moroccan desserts.

A Taste of Bali
Balinese food is oh so sophisticated, but so simple to prepare. Many of us have been to the island paradise that is Bali and marvelled at the delicious food available everywhere, from the street stalls to sophisticated restaurants. In this class Sunny will take you on a culinary tour of Bali as you prepare the most wonderful set of dishes, then enjoy the fruits of your labours at the table. This will be a memorable class.

A Traditional Christmas Lunch
If you'd love to have a traditional Christmas lunch this year but you're not sure how to go about it, Frederick will be teaching you some delicious recipes to present on your table this Christmas. Braised venison with bacon, chestnuts and wild mushrooms, parsnip and stilton tart for those of you who may need to cater for a vegetarian in the family and a traditional plum pudding with brandy sauce are just some of the delicious recipes Frederick will be showing you today. This is an extended class of around 4 hours.

Advanced Pasta-making
If you have been to our Pasta and Risotto class this class may interest you. Frederick will expand on the simple art of pasta and will teach you how to create coloured pasta, pasta shapes, various fillings and sauces. Get ready to impress your friends with your pasta-making skills.

Advanced Pastry Making
This class is for the more adventurous among you and if making your own puff pastry and profiteroles excites you, this class is the one. Pastry making can often be difficult and frustrating but adherence to a few basic rules can yield rewarding results. Rohan will be teaching you how to make your own croissants, Danish pastries, choux pastry and rough puff pastry. This class has an extended duration because sweet treats sometimes take just that little bit longer.

After Work, During the Week
You have finished work and its mid-week. You want to eat well but not be a slave to the kitchen. And you don't want to get into the rut of the same old pasta or grill. In this class, over four weeks, Riki will show you how to make quick meals for you, your family or your friends that are tasty and exciting, but do not require extra shopping or exotic ingredients beyond the pantry. You will learn how to shop, how to build a pantry and how to stock a fridge such that good eating is always at hand. You will gain some tips that allow you to make the potentially bland into a taste sensation. You will become the guru of the after work table!
This is a four class series. Single class bookings open in the week of the class and will be accepted only if places are available.

All Things Italian
Is Italian Australia's national cuisine? You would almost think so given the number of Italian restaurants and cafes that we have. From the impact of the great Italian immigration into Australia in the 1950s and 60s to the natural influences of weather and terrain, not to mention our travels to that most beautiful of countries, our culture seems just so suitable to the inspiration of Italy for our food. In this class, with her experience working for Jamie Oliver at Fifteen Cornwall, Sophie Budd will take you on a culinary journey through Italy, cooking with you and sharing her knowledge of Italian traditions and local dishes. Buon Appetito!

An Australian Christmas Feast
Forget about the traditional European fare a of goose, turkey and chicken for Christmas, they don't quite suit our climate. Here in Perth we are lucky to have beautiful summer weather on Christmas Day and our celebration food should be designed to match. With beautiful seafood on our doorstep and barbecues in most gardens, why not create a memorable Christmas feast that suits our wonderful climate. In this class Rohan will teach you how to make beautiful marinades to go with whole fish and seafood and perhaps a glazed ham or salt baked fish to pop in the oven while all the action is going on at the barbecue. You will also learn how to make some great innovative salads with our summer fruits and vegetables.

Another Turkish Delight
There has been fantastic interest in our Turkish class with Riki Kaspi, so much so that it is time for a new class, with new recipes that draw on Riki's Turkish background and passion for the food of the Turqoise Coast. This will be a special class for those that want to expand their culinary repertoire. Of course, you don't have to have attended an earlier Turkish class to do this one. Just jump right in here!

Aphrodisiac
Love and food!! In all cultures, there are certian foods that are reputed to highten the senses and smooth the path of love. In this class we will explore some of these foods and, perhaps, smooth your path to love!!! What could be more convivial than a fun night preparing luscious food and then sitting down to eat what you have produced over a glass of wine in an intimate setting with some like-minded new friends? At worst, you will have a fun-filled night learning to cook good food and then relaxing over a delicious meal. And the best case scenario? Who knows?!!!

Arabesque - Middle Eastern Cuisine
The Middle East is an exotic and ancient region that is one of the crossroads of the world. Its food, be it from Lebanon, Israel, Syria or Egypt or beyond is characterised by dishes like humus, babaganoush, kebabs, stuffed vegetables and a range of wonderful exotic sweets. Riki Kaspi was born and raised in this exotic and exciting part of the world and is brimming with wonderful ideas, recipes and hints to enable you to produce a great table of Middle Eastern delights. Join her for the journey.

Bali - Jimbaran Sunset
If you have ever reminisced about the food of your Balinese holiday or just have a keen interest in South-East Asian cuisine, then this class is not to be missed. Nothing replicates the authentic taste of cooking over the open coals and, with dishes like Ikan Bakar (grilled fish) and Sate Pentul (Pork Satay), we will be doing just that. This, together with some delicious street food, will have you returning to your kitchen to replicate them time and time again.

Bread-making for Beginners
Breads, rolls and Focaccia. All over the world bread is an important staple in everyday diets. It comes in all forms - leavened, un-leavened, flat, baked, fried, grilled and many more. In this class we will focus on the more traditional European breads and the many flavours that can be incorporated into them. Baking your own bread at home is one of the most rewarding experiences in the kitchen - it enlivens all of our senses and is just plain tasty! Book now for a class that will cover all the fundamentals of bread-making and have you confident enough to start baking at home.

Breakfast & Brunch
When Riki owned Riki Blake's cafe in North Perth, she had a huge following for her breakfasts and brunches. We are now so lucky having Riki sharing her secrets and recipes with you at the Cooking Professors School. In this class, Riki will teach you how to put together stunning breakfasts and brunches so that can start your entertaining early on weekends (or perhaps simply indulge you and your nearest and dearest to what many say is the most important meal of the day). Perhaps Riki's famous Shakshuka will even make an appearance on the menu?

Chef's Secrets
We have repeatedly been asked to do a class on basic kitchen skillls. These skills make cooking so much less stressful and so much easier. fred has a huge number of hints and secrets that she wants to share with you to acheive these goals, from knife skills to the correct amount of seasoning to knowing when things are just perfectly cooked. For example steak and fish can be tricky, but not after this class! These are among the skills and hints that you will learn about in this class.

Chocolat!
First there was the novel by Joanne Harris, and then the film with Juliette Binochet. Now there is the cooking class with Sophie! In this class, Sophie will explore the sinfully delicious world of chocolate. Chocolate is such a versatile and wonderful ingredient. It can be used in every part of a meal; it also can be a snack, a fabulous drink and much else. Sophie will show you how to use chocolate creatively. This is the class for all chocoholics. And we know there are many of you, so do book straight away as this class will fill quickly.

Christmas Baking
In the final hectic days leading up to Christmas, the last place you want to be is in the kitchen baking. In this class Rohan will teach you some wonderful recipes that can be made a few weeks in advance and still be great for the Christmas season. Italian Panforte and Spanish Turron (nougat) are two great examples of Christmas baking that can be prepared ahead of time. You will also learn how to prepare a couple of quick desserts that can be done on the day like Champagne Sabayon with fresh summer berries.

Christmas Desserts
In this class Frederick will not only be teaching you how to make a delicious traditional Christmas pudding with brandy butter but some delicious alternatives such as fig and muscat pudding with orange custard and a classic pavlova with mulled fruits among other delicious treats. Take this opportunity to learn how to finish you Christmas lunch with something traditional or a little bit different.

Christmas in July
Frederick has created a delicious menu for his class today. If Smoked Salmon and Creme Fraiche Blinis and Turkey with Dried Fruit and Pork Stuffing sound good to you, this could be the menu you can recreate for the real Christmas in December together with the dessert and accompaniments on the menu for today's class.

Classic Cakes 101 Mastering a Round Cake
Just starting out, or wanting to learn how to set up your cake with chocolate ganache so that your fondant covered cakes have those sharp edges that are all the rage today. Then this class is for you. You will learn how to cover an 8" round, and decorate it with a beehive, and flying bees!!

Classic Gourmet Dinner
THE PRICE FOR THIS CLASS IS FOR TWO PEOPLE - ONE STUDENT AND ONE GUEST, NOT PER PERSON PRICE AS LISTED BELOW
This is our new Saturday Gourmet Dinner class that has been so popular in the past. The class leads to a delicious gourmet dinner for participants and their partners or friends. The class begins at 10.30 am and includes a light lunch. Your chef will guide you in the preparation of a classic gourmet dinner. At 4 pm preparation ends and students go home to freshen-up. At 7 pm they return with their partners or friends and have a wonderful dinner party consuming the delicious food they prepared. Share a unique experience with your friends. There is a limit of 12 students and 12 guests.
There are no individual places in this class, one student and one guest per booking - $170.00 per pair. 12 pair places available.

Classic Roasts for a Lazy Sunday
In this special winter class you will learn how to roast the perfect joint of meat- the taste that will take you back! This is an extended Sunday class that will culminate in a feast of marinated Roast Lamb and Crispy Pork Crackling with the best of winter's vegetables and, of course, a winter pudding.

Cocktails and Canapes
Let's have a party with Chef Sunny . Sunny's Friday sessions at The Cooking Professors Cooking School have proven to be extremely popular. Book this one quickly so that you won't be disappointed. Bring your friends and learn how to create delicious canapés. There may be a ceviche of white fish or baby tomato tarts. Cool down and muddle your way to a refreshing taste of tropical and refreshing cocktails. A perfect way to chill with friends on the sunny side after a week's work. (This class is a little more expensive due to the cost of the cocktails. Sorry!)

Cooking Delicious(ly)
Many of us buy the foodie magazines. But do we really use them well? In this class with the Cooking Professor, Peter, we will cook as many recipes as we can over a month using the current Delicious magazine as our guide. After this four week class, you will be confident to exploit to the full those foodie magazines that you buy. And if you don’t buy the magazines, here is a great way to learn how to expand your cooking horizons without spending a lot of money on cooking books.

Cooking for the Completely Clueless
Let's face it, some of you are terrified of the kitchen but would really love to learn to cook. In this new class we teach the basics. From knife skills to cooking terms, we have all bases covered and you will go home with the skills to tackle those recipes you thought were out of reach with the added bonus of eating a great dinner you have helped to cook.

Cooking with Quail, Duck and Chicken
In this class, Fred will be teaching you how to bone quail, duck and chicken and how you can get the most from these delicious birds.
Corton Bloke
This class has proven to be just so popular that we have to run it again. It is our famous beginners class. It has become so famous, in fact, that we have had to change its name! A renowned French Cooking School reckons that we are so competitive with them that they have threatened us with the Federal Court if we continue to use the old name. But in keeping with our clients passions, we have changed the name to reflect their love not only of food, but also great wine! So Corton Bloke now celebrates the hill of Corton in Burgundy as well as great food!

Cupcakes For Any Occasion
Once upon time there were just a couple of favourite cupcake or patty cakes as they were called. How times have changed! Cupcakes have now just about established themselves in the hearts of everyone. Whatever the occasion from baby cakes, birthdays to your wedding cake, there is a cup cake for you. In this class Fred will teach you the techniques and bake some amazing flavoured cupcakes for you to create and enjoy. Flavours we will be making include marbled chocolate and caramel, gorgeous ginger and buttermilk and an orange and cranberry.

Dads & Daughters, Mums & Sons! (Under 12s)
The price for this class is for a pair - one parent and one child. In today's class, Riki will teach parents and their younger children about cooking. This is a really great way for parents and children to get together and have fun learning new skills and eating healthy, good food. Come to the Kitchen and have fun together! Today's class is designed for yopunger children and their parents. (Every second month, we will schedule another class for teenagers and their parents.) Extra children can be included for $30 per child.

Delicious Quail
In this class, Frederick will be teaching you the finer points of boning, stuffing and cooking quail. For those of you who have enjoyed this little bird and would like to cook it at home, this is the perfect class for you. Frederick has created a lovely menu for today's class that includes the quail, accompaniments and a dessert for you to enjoy.

Dim Sum: Asian Tapas!
We think of tapas as being Spanish. But what about all those wonderful small plate and by-hand snacks that are so prevalent throughout Asia? In Australia, we draw inspiration from all over the world for our tapas. In this Friday evening sundowner, Chef Sunny will lead you through the preparation and enjoyment of a selection of the delicious small plate dishes, from sushi to rice paper rolls to dim sum and many more, that you will find in the countries of Asia. As Sunny says ' Ni Hao!, Yokoso! Mabuhay!'

Dinner Parties for "Dummies"
Now we know you are not a dummy! However, many people find hosting a dinner party stressful. Let us show you the stress free way! In this class you will learn how to prepare and cook a 3 course meal in 2 hours, including menu planning, preparation, timing, cooking and presentation. Learn shopping tips, learn what can be done in advance and learn how to time everything so that you are not a prisoner in the kitchen whilst everyone else is enjoying themselves! This is the class that provides the key to holding the perfect dinner party.

Duck Wok
This class, taken by chef Sunny, is a variation on our usual Gourmet Saturdays. This class will commence at the Cooking School at 10:00am. From there, Sunny will take you on a 'Duck Walk' through Northbridge where he will host you in a tasting tour of his favourite restaurants and shop through Asian gourmet deli's. Finishing up at Bar 399 for a cold drink and nibbes. This will be a memorable 'foodie' experince covering all the steps in gourmet cooking.
Easy Entertaining
One of the real pleasures in life is entertaining your friends over lunch or dinner at home. Yet for many this is a stressful and difficult prospect. Let's take the stress out of entertaining in this very popular class. Spring and early Summer give us ample opportunities for enjoying yummy food and a glass of wine with friends. Be prepared and gain confidence by learning some stylish, but easy finger food or tapas, maybe an antipasti platter and, of course, some more substantial yummy dishes. And we won't be forgetting those desserts, either!

Enjoying The Good Life
You know a little about cooking, but you want to extend your skills to be the confident entertainer. This is the class for you! In this four week class, we will explore how to put together a Dinner Party for your family and friends. You will learn how to put together a menu, how to give it the 'wow' factor but not be a slave to the kitchen and how to make the whole function enjoyable - for you as well as your guests. You can enrol for all four weeks at a discounted price of $75 per class or for just single weeks at $80. Preference will be given for those that book for all four weeks.

Entertaining to Impress (beginners)
This is the first in a series of three classes for beginners, intermediate and advanced students. In this class Frederick will teach you the skills to create your own impressive dinner party - canapes, entree, main course, dessert and petit fours. He will show you how to do all this with a minimum of fuss so you can enjoy the dinner you cook too. Fred will be presenting a beautiful menu for the coming summer months.

Family Cooking Can Be Fun
Family cooking can be a challenge. Not only is there the difficulty of coming up with a varied and changing menu, but the food has to be healthy, too. And of course, EVERYONE seems to have different likes and dislikes. Then there is the issue of watching the budget! In this four class series, Phillipa Lindsell, who bakes for a number of cafes around Perth and is a young mum and a great cook, will lead you through some truly tasty dishes for your family and she will pass on many tips on how to keep the menu interesting, healthy and economical.

Fast But Fabulous
You have finished work and its mid-week. You want to eat well but not be a slave to the kitchen. And you don’t want to get into the rut of the same old pasta or grill. Even worse, you don't want to succumb to buy-in fast food. Why not learn how to make really good food fast in your own kitchen? In this class, Riki will show you how to make quick meals that are tasty and, in a word, fabulous, for you, your family or your friends. You will become the guru of real fast food for the after work table!

Fast but Fabulous 2
For those of you who have enjoyed Riki's Fast but Fabulous class and would like to add to your fast but fabulous repertoire, this is the class for you. Riki will teach you how to make fabulous and delicious food without taking a huge amount of time or effort to do so using fresh and delicious ingredients. This is fast food that you can make after work with little effort. Continue to impress your family and friends with your fast and fabulous skills.

French Bistro
Paris is such a cosmopolitan city. But one of its most enduring culinary treats is the traditional Bistro. Riki spent some time working in bistros around France and one of her many passions is French Bistro food. In this class, Riki will take you on a journey through some of the timeless recipes of the French Bistro, to this day the cornerstone of classic cuisine. Be inspired by this great tradition.

French Bistro - a second class
Our French Bistro class has been exceptionally popular. It is now time for us to offer a second class, with new recipes, and a new take on the classic dishes of the French Bistro. In this class extend your French Bistro expertise and repertoire. Further your skills. Of course, it is not necessary to have already taken a French Bistro to take this one. You can start your French Bistro adventure here as well!

French Macarons - 3 New Flavours
If you loved the first class with Jacques and Alexandre, we have added another class with three new flavours for you to learn. Alexandre and Jacques will teach you patiently how to make these sweet little morsels with three new fillings in this hands-on class. You don't need to have done the first class to book into this one, it's simply more macarons with different flavours. This class is very popular, so book soon! This class is GLUTEN FREE.

Gluten Free And Delicious
A gluten-free diet can be a challenge. However, it need not be! In this class we will learn how to make great dishes for everyday eating, but using gluten free products. This is the class to explore how to ensure that a gluten-free diet has all the culinary pleasure that you expect.

Gluten-free Delights
Some of you need to cook for those with a gluten intolerance and don't quite know how to create a delicious gluten-free meal. During this class our chef, Frederick, will be giving you some tips on gluten-free cooking and you will prepare and share some delicious gluten-free food including Buckwheat and Blueberry Pancakes and Roasted Field Mushrooms on gluten-free Focaccia Crostini.

This very popular Saturday class leads to a wonderful gourmet dinner for participants and their partners or friends. This class, on the eve of Valentine's Day, will be taken by Sunny de Ocampo. Sunny's first Gourmet Saturday late in 2009 was one of the highlight classes of that year and this one is sure to match. Chef Sunny will present a culinary journey to all lovers of food and passionate cooks. Join in and create a labour of love in The Cooking Professor's Kitchen. Taste, feel the textures and share the flavours.
The class begins at 10:30am and includes lunch. At 4pm preparation ends and students go home to freshen up. At 7pm they return with their partner/friends and have a wonderful dinner party consuming the food they have prepared. Share a unique experience with your friends. Gourmet Journey

Once experienced, never forgotten - the truffle is a sublimely delicious addition to many foods. Our chef will be teaching you about this magic ingredient that can be used to enhance many delicious foods. The Manjimup truffle season is starting and the dishes you cook and share today can be enjoyed from season to season. This is a special long duration class of approximately 4 hours and is not one to miss.

The West Australian truffle season is just around the corner and what better way to celebrate it than to join The Cooking Professor to make some delicious recipes that showcase this unique ingredient. WA truffles are in huge demand both nationally and internationally and, whilst expense, needn't be out of reach for use in the home. The rich, pungent aroma of the truffle is the perfect touch for a special scrambled egg breakfast or the highlight of a stunning evening risotto. In this class you will learn how to cook and store the truffle but also some of the culture that goes along with it. Greece and Turkey: So near but...
Despite any political tension between, Greece and Turkey, they share more than a little in their cuisines. Let the world of cuisine rule in terms of harmony!! In this class, Riki Kaspi, whose family background is in part Turkish but who loves Greek food, will take you on an harmonious journey through the eastern end of the Mediterranean to sample recipes from both Greece and Turkey. Would you like to get inside celebrity chef Jamie Oliver's Kitchen? Chef Sophie was a training chef at Jamie Oliver's Fifteen Restaurant in Cornwall where she taught the apprentices in Jamie's style. She will be sharing her knowledge and secrets from Jamie's Kitchen with you in this class. This is a unique opportunity to get to know what goes on inside the kitchen of one of the world's most famous chefs. How is it that Jamie seems to be able to effortlessly produce great food with a minimum of fuss? Learn the tips, cook the recipes and take them home to your own table.

Jams, Preserves and Pickles
During this class our Irish chef Fred Kirby with traditional experience will explore the history of preserving with salt, sugar, vinegar and alchohol, then take you through the techniques of jam making where you will learn all about the equipment you will need, how to sterilise jars and how to pot, seal and label your preserves. Learn how to make a delicious cherry berry jam, Grand Marnier and Clementine marmalade or try your hand at a wonderful pear and walnut chutney.

Japan - Land of the Rising Sun
Japanese food can often be thought of as overly complicated but with dishes like Sushi, Sashimi and Ramen on the menu, that could not be further from the truth. These dishes are the cornerstone of Japanese cooking and, with a few tips and some instruction from Rohan on how to pick the freshest fish and ingredients in the market, you will be well on your way to discovering how to prepare some exceptional Japanese delights.

Japanese Home Cooking with Chihiro
Many people want to cook Japanese food but are frightened of the different ingredients required. In this class, our Japanese-born instructor Chihiro will be teaching you some traditional dishes and some with a contemporary twist. Sushi of course, but there will be new and exciting dishes for you to cook too. Chihiro will also advise you where to buy your necessary ingredients and what a good Japanese pantry should contain.

Junior Cupcakes for ages 8 - 12
Has Junior Masterchef inspired your children? What could be better than a class in cupcake decoration and presentation for your juniors? There is something very special about deliciously decadent cupcakes. In this two-hour class. the children will learn the techniques of decorating cupcakes to make them look just so perfect and mouthwatering. Note the class does not include baking. The cupcakes will be provided for the class so that your kids learn how to harness their creative talents in cupcake decoration and presentation. At the end of the day, the junior masterchefs will take home a set of cupcakes to impress and share with their family and friends.

In this class, we will continue our Mediterranean journey by visiting this wonderful country with its simple salads, the art of antipasto, the use of good meat, vegetables, seafood, olives and olive oil, cheeses and herbs. Perhaps the defining characteristic of these foods are the fresh flavours that mostly come from simple preparation of seasonal produce. In this class we will draw on ingredients from the typical mid-Mediterranean cuisines of Italy and the Islands of the Mediterranean and create easy but exciting dishes that remind us of those sun-drenched lands. In this class, we will explore some classic dishes and some in the modern-style, as well.

Mediterranean Journey - The South of France
The South of France: sunshine, rolling hills redolent with herbs and the sea. All of these are the backdrop to a famous cuisine that is noted for its seafood, lamb and olives. In this class, let's go on a culinary journey to this land that follows the Mediterranean coast from the Spain to the Alps. We will prepare (and eat!) some dishes that are typical of this wonderful region, but which are just so suitable for Perth.

Valentine's Day - Food of Love
If there is ever a day to romance a partner Valentine's Day is the one. This class is designed with the perfect romantic dinner in mind, some dishes can be prepared in advance so it will be easy enough for the home cook but elegant enough to wow that special someone. Oysters, Champagne and Chocolate will feature in a menu to remember.

Vincenzo's Italian Feast
If Ravioloni with Ricotta and Pumpkin in brown butter sauce and Tiramisu sound interesting, so will the rest of Vincenzo's menu for his Italian Feast class. Vincenzo will teach some of the basics of good Italian cooking and send you home with the skills to prepare the delicious meal enjoyed during this class.

Viva Barcelona
Spanish of course! In this class, Riki will take you on a tour of the Catalan region of Spain, and in particular, the city of Barcelona. If New York never sleeps, Barcelona never even thinks about sleep. The food of Catalonia is so much more than just Tapas (great though tapas is). In this class, Riki will introduce you to some of the more interesting and different aspects of the food of the Catalan region. It is a region that covers both the mountains and the sea, and so is very diverse. This gives a tremendous scope to cooks wanting to make the best of the Mediterranean produce of Catalonia.

Wild Sourdough Breadmaking with Yoke Mardewi
Yoke's classes are hands-on. She aims to share her knowledge and passion for wild sourdough bread-making so that you can replicate in your own kitchen what she teaches in the class. Wine and Tapas
Today you will be experiencing the hands-on preparation of some great tapas - those fabulous small-plate snacks from Spain. As well, you will have the opportunity to taste some fantastic Spanish wines selected by our chef to partner with the tapas. Our sundowner classes are just the thing to expand your entertaining knowledge and have a lot of fun with new and old friends. This class is slightly more expensive due to the wine provided for the class.

Winter Comfort
The chilly winds of winter are upon us, the rain is on the roof and the fire is blazing inside. It is time for those slow cooked, heart warming winter dishes. In this class you will learn how to make the perfect winter meal, from hearty soups to wonderful slow cooked braises; and it is time for those wonderful root vegetables, too. We will look at how to gain maximum flavour by using good stocks. And we will not forget those lovely sticky, delicious winter puddings either. Of course there will be a glass of Western Australian red at hand!

Winter in Spain
As the weather gets more chilly, we begin to think of winter food. And what a perfect place to seek out new recipes than Spain? Our chef, Rohan Wills, spent several years in Spain and has a passion for Spanish cuisine. What could be better than to learn some secrets and techniques from Rohan and expand your Spanish recipe repertoire? You can find out how to prepare and cook the famous Bacalao (Salted Cod) and taste for yourself why it has been prized for centuries throughout Spain, also make rich warming stews and finish with sweet custard filled pastries with hints of Moorish spices.This will be a great class!

Winter Soups and Winter Puddings
To warm the cockles of your heart, Frederick has put together a menu with lovely winter soups such as Lentil, Pancetta and Root Vegetable Broth with Fresh Herbs and a Delicious Pineapple and Polenta Upsidedown Cake with Ginger Mascarpone. These are just two of the beautiful winter dishes that Frederick will be teaching in his class today.

Wok Flavour
Cooking in a wok is a very quick and easy way to make meals at home for the whole famiy. In this class you learn how to prepare and execute several wok dishes that have that smoky, charred flavour that is synonymous with all stir-fry dishes. You will also learn about vital heat control and caring for your wok.

Wok with Sunny
Join Chef Sunny for a Wok adventure across the Great Wall of China and discover fresh and tasty wok cooked dishes. Learn how to season your wok, how to stir fry noodles and wok some Asian vegetables. On the menu, there may be diced ginger chicken in Asian vegetables and cashew nuts, Shanghai egg noodles with shredded pork and Asian leaves and also a flaming seafood dish in this one night journey. Learn Sunny's fried rice techniques and many more Chinese cooking secrets utilising that most versatile of cooking utensils, the wok.

Learn the art of sushi with a Chef Sunny De Ocampo. Sunny is an ultra-enthusiastic teacher and he will let you in on his secrets from the “Land of the Rising Sun.” Create your own sushi with a new modern twist using the freshest ingredients with extra flare and fun. Learn new style sushi with your favourite fillings like gingered tempura prawns, pickled spiced sashimi and soy tea poached tofu. Oishi ne! (Bloody wicked mates!)

You Say Oysters!
There is more to oysters than just shucking the perfect oyster. In this class Jerry Fraser will be showing you how to cook a delicious oyster chowder and oyster poorboys as well as demonstrating how to shuck an oyster. Jerry is the King of Oysters. An energetic and enthusiastic man, Jerry Fraser’s growing popularity as an Oysterman is infectious. As Jerry says “I love the pleasure on peoples faces when they eat them. It’s like taking that first plunge into the ocean. It’s clean, pristine, fresh. They taste the brine first, then they get the textures and flavours.” Book soon to avoid disappointment.

Yummy Mummies
How about getting together with some other Mums (or Dads!) for a morning cooking class and coffee? In this class, Sophie will go through lots of hints for keeping the family food agenda exciting, inventive and yes, Yummy!! Learn some kitchen skills, meet new and old friends and finish with a lovely lunch that you have cooked. Of course, the kids are welcome, too!

Yvonne's Asian Gourmet Walkabout
Take a walk into the Asian gourmet world of Northbridge with Yvonne and learn about the spices and produce the Asian gourmet shops in this multicultural location have to offer. The tour will take you into shops like VHT, herbal produce shops and also an Asian fishmonger. During the tour, you will learn how to distinguish between the different fresh seasonal Asian vegetables, frozen produce, soya bean products and also all the different sauces and spices. This tour is perfect for people who want to learn more about Asian cuisines and where to source the necessary ingredients in Perth. It's a hands-on show and tell about the types of Asian products on offer here in Perth.
At the end of the tour you will return to The Cooking Professor to cook up a traditional market-style dish found on the streets of South-East Asia. Yvonne will teach you how to stir up coconut rice, a delicious chicken curry made from fresh and dry spices and cook Asian roti perfectly with the perfect condiment of pickled vegetables and finish it off with a masala (spice) tea.
The tour starts at 9.30 am and participants will return to The Cooking Professor around 11.30 am to prepare and cook their delicious lunch to be shared in our dining room. This is an extended class of around 4 hours. Location details will be provided to participants prior to the class.
