wokJoin Chef Sunny for a Wok adventure across the Great Wall of China and discover fresh and tasty wok cooked dishes. Learn how to season your wok, how to stir fry noodles and wok some Asian vegetables. On the menu will be diced ginger chicken in Asian vegetables and cashew nuts, Shanghai egg noodles with shredded pork and Asian leaves and also a flaming seafood dish in this one night journey. Learn Sunny's fried rice techniques and many more Chinese cooking secrets utilising that most versatile of cooking utensils, the wok.

Easy Entertaining

lunch guestsOne of the pleasures of life is entertaining friends. But it can be stressful without the right guidance! In this class Peter will help you with some great but simple recipes that will enable you to confidently invite your friends over without any stress on your part. Learn the tips of easy entertaining in this class - how to design a get-together, prepare simple finger food, structure a menu and do most of the work ahead of time so that you can enjoy the company of your friends without being a slave to the kitchen.

Rick Stein's Seafood Journey

Wednesday 8 July, 6:30pm-10pm

FishCelebrity TV chef Rick Stein's first love is seafood. And our very own Sophie Budd trained at Rick Stein's famous seafood restaurant in Padstow, Cornwall. So, in this very special night you will learn from Sophie some of the lessons she learned at the stove of the master. The class will cover how to buy good seafood, how to prepare it as well as some stunning recipes. This will be a special night and an opportunity to gain some insights from one of the world's great seafood restaurants. Be quick, as this class will be popular!

A Taste of Greece

Thursday 9 July, 6:30pm-10pm

GreeceOne of the world’s most popular cuisines is that of Greece. It is also one of the oldest – perhaps the purest of the Mediterranean. Seafood, olives, olive oil, tomatoes, cheeses and vegetables are all essential. But perhaps the defining characteristic of Greek food is clean flavours that mostly come from simple preparation and cooking. In this class Sophie will draw on ingredients from the typical Greek kitchen and help you create easy but exciting dishes that remind us of the sun-drenched Peloponnesian isles.

A High Tea

Saturday, 11 July, 3pm-6pm

High teaA High Tea is a sophisticated way of eating a light but special meal with friends and taking some refreshing tea late in the afternoon. In this class, Philippa will guide you in the production and presentation of some lovely cakes, sandwiches and cold cuts, which we will then enjoy with much pomp and circumstance! We will try and source some nice china to compliment the China Black and Earl Grey and Philippa will give you some tips on making the table look just fabulous. Witty conversation and perhaps even some gossip might be heard!

Pasta Shapes - Beyond Basic Pasta

tortelliniOur Pasta classes have been a resounding success. Many of our students have taken the basic Pasta and Risotto class and are now clamouring for more. "How do we make ravioli?", you say. "And what about tortellini?" You have done Pasta 101 and now it is time for a more advanced class, exploring the wonderful world of pasta shapes and pasta stuffed with wonderful morsels. In this class, Peter and Sophie will guide you to a new level of pasta making. Come and expand your pasta world! Your friends will be forever grateful.

Enjoying The Good Life

Wednesday 15, 22, 29 July and 5 August, 6:30pm-10pm

Chicken TianYou know a little about cooking, but you want to extend your skills to be the confident entertainer. This is the class for you! In this four week class we will explore how to put together some great food, be it a Dinner Party, a Picnic, a Barbecue or a Brunch. You will learn how to design a menu, how to give it the ‘wow’ factor but not be a slave to the kitchen and how to make the whole function enjoyable — for you as well as your friends.

Cost $300 per student for Four Week Series. Single classes $80 subject to availability.

A Saucy Time

Thursday 16 July, 6:30pm-10pm

HollandaiseOne of the foundations of good cooking is a good working knowledge of how to make a good sauce that is just right for the dish you wish to prepare. Sauces are essential to the classic cuisines of Europe and Asia. In this class, Sophie will reveal the techniques to preparing the mother sauces and guide you in using these sauces to complete some truly inspiring recipes.

Gourmet Dinner

Saturday 18 July, 10:30am-4pm (prep) and 7pm onwards (dinner party)

DinnerThis very popular Saturday class leads to a wonderful gourmet dinner for participants and their partners or friends. The class begins at 10:30am and includes lunch. At 4pm preparation ends and students go home to freshen up. At 7pm they return with their partner/friends and have a wonderful dinner party consuming the food they have prepared. Share a unique experience with your friends. Limit of 24 people. BYO

A Vegetarian Feast

VegetablesVegetables are healthy! And they make for an infinite variety of wonderful tasty food. Vegetables are not just for vegetarians. This is a class for anyone who wants to add some variety to their diet beyond what can be the boring old meat and two as well as for vegetarians. With Peter, you will learn to build a menu around vegetables to extend your knowledge and to impress your vegetarian and meat-eating friends alike.

Meetand Eat007It is hard to meet the right person. Night clubs and pubs are so noisy and not really conducive to conversation. What could be more convivial than a fun night preparing luscious food and then sitting down to eat what you have produced over a glass of wine in an intimate setting with some like-minded new friends? At worst, you will have a fun-filled night learning to cook good food and then relaxing over a delicious meal. And the best case scenario? Who knows?

(And if there is demand, we will hold a Meet and Eat for boys wanting to meet boys and girls wanting to meet girls – just call to let us know.)

Wine and Tapas

wine and TapasThese sundowner events at the end of the week will feature the Cooking Professor, Peter, guiding you to prepare some great tapas - those fabulous snacks from Spain. As well, Scott Taylor of the Beaufort Street Merchant will be presenting some funky whites and cutting edge reds that he would like you to try. These will be premium, boutique wines. The Cooking Professor will partner the wines with the tapas. These evenings are more than a tasting – they are a combination of a wine appreciation and cooking class that will expand your knowledge of a great food tradition and some fabulous wines. What could be a better way of unwinding from the week?.

modern ThaiSunny side UP! style is the cooking of traditional Thai dishes in a Modern Australian presentation. This is a class for hot lovers and passionate eaters. Tantalize your taste buds and create modern culinary art from the Land of Smiles. Chef Sunny will empower you to create three courses of delights! Learn how to cook with extra love! Learn impressive techniques and recipes to share with your friends! The dishes might include steamed chicken, mushroom and water chestnut dumplings with spiced turmeric sauce; or scored fillet of fish, fried and infused with kaffir lime leaf and served with grapes and hot and sour chilli apple sauce; or a black glutinous rice pudding with shredded coconut jelly. Bring your taste buds along for this astounding ride!

Bread for Beginners

breadBread is the staff of life. It is also very rewarding to make. In this class Sophie will introduce you to the world of bread baking. You will not believe how simple it is to bake a loaf or two of the most delicious breads. As well as the basic loaf, Sophie will teach you about fruit bread, foccacia, the baguette and fresh bread rolls. She has some wonderful old recipes to share with you. We will also prepare an antipasto platter to eat with our bread over a glass of Riseborough Estate wine.
