Enjoy a class with Vincenzo Velletri where you will learn how to make traditional Italian sausages from a small area in the center of Italy (Fondi – Lazio region).  

You will learn how to cut and select the meat to use for the sausages, as well as the spices that are used and the history behind why they are used.
Vince explains how the whole pig was used in the past, the breeds that were used historically compared to the breeds more commonly used today.

Along with the sausage, you will enjoy a traditional dish that is usually served for the occasion.

The class will be hands on and part of the final product will be used for a meal at the end of the class. Whatever is left over will be divided amongst the participants to take home.

Please note that this class needs a minimum of 10 persons to proceed and the length of the class can be anywhere from 2 - 3 hours.
