French Onion Soup

Ingredients

2 large brown onions, 2 large red onions, and 2 large sweet white onions, halved and thinly sliced

2 tablespoons oil

2 tablespoons salted butter

6 cups homemade or store-bought chicken broth

8 thyme sprigs

1 salt, plus more to taste

3/4 teaspoon freshly ground black pepper

1 cup red wine

6-day-old rustic bread slices,

250gr gruyere cheese (or tasty cheese), grated

Directions

Combine onions, oil, and butter in a pot over medium-high; Cook, stirring occasionally, until onions caramelize, about 20 minutes. Reduce heat to medium, and continue to cook, stirring and scraping any browned bits from bottom of pot with a wooden spoon, until onions are tender and caramelized, about 25 minutes.

Add wine, and cook, stirring to scrape up any remaining browned bits. Simmer on medium, stirring constantly, until wine is mostly evaporated, 2 to 3 minutes. Stir in broth, thyme, salt, and pepper. Increase heat to high and bring to a boil. Reduce heat to medium-low, and simmer, partially covered, 20 to 25 minutes.; add salt and pepper to taste.
